Spaghetti with Eggplant and Artichokes

This recipe I got from my favorite Brazilian neighbor.

1 tbsp Olive Oil

1 medium onion chopped

2 cloves of garlic chopped

1 tbsp of lime juice

4 small eggplants in cubes

20 oz of tomato sauce

Salt and pepper to taste

14oz of artichoke (from a jar)

2 tbsp of black olives

10.5oz of spaghetti


In a large skillet heat olive oil, add onion, garlic, lime juice and the eggplants.Cook for 5 minutes or until the eggplant and the onions become golden brown.

Add the tomato sauce, salt and pepper and let it cook for 20 minutes.

Begin to prepare the spaghetti when the sauce reaches 13 minutes of boiling.
Add the artichokes and the olives to the sauce and cook for 5 more minutes.

Place the spaghetti in a bowl and top with the sauce.
