Nena’s Enchiladas

One of my favorite dishes at our work potlucks are Margarita’s Enchiladas They are just delicious! I asked Margarita for the recipe and she said that I had to promise to mention that it was not her recipe, but her sister’s. So… thank you Margarita’s sister!

Ingredients:

 
1 cup Cooked and shredded chicken

1 can (28 oz) Las Palmas green enchilada sauce

4 cups shredded jack cheese

1 dozen flour tortillas
 

Directions:

 

Preheat oven to 350 degrees. In a large bowl, combine meat, 1 ½ cups sauce, 2 cups cheese. Spread ½ cup mixture onto each tortilla. Roll tortillas and place in a 13 by 9” inch baking dish. Pour remaining sauce over enchiladas. Sprinkle top with remaining cheese. Bake for 30 minutes.

 

Serves 10 people. Serve with green salad, Spanish rice, and corn.
