Mocha Squares

A must on my childhood birthday table.

Ingredients:

 

2 eggs

1 ¼ cup of sugar

½ cup of milk

2 cups of flour

2 tsp baking powder

2 tsp vanilla sugar

2 tbs cocoa powder

1 3/8 stick of butter

 

Icing:

 

Just over a cup of powdered sugar

2 tbs cocoa powder

2 tsp vanilla sugar

3 tbs cold strong coffee

 

Garnish:

 

Shredded coconut

 

Preparation:

 

Set the oven to 375° F. Mix the eggs and sugar well, pour in the milk.

Mix flour, baking powder, vanilla sugar, and cocoa powder; pour it into the egg mix.

Melt the butter and pour that into the mix, stir until you have a smooth mix.

 

Put baking paper in the bottom of a 13 X 9 inch baking dish. Pour the mix in.

Let it bake for 10-15 minutes.

 

Start making the icing. Melt butter, stir down the powdered sugar, vanilla sugar, cocoa powder, and the cold coffee. Mix well until you have no lumps and the icing is smooth.

 

Cover the cake with icing before the cake is cold. Sprinkle the shredded coconut over the icing immediately so that it sticks in the icing.
