Homemade Ricotta Cheese

This Ricotta recipe is amazing on a baguette slice with dried figs poached in port on top…

Ingredients:
 

8 cups whole milk

1 teaspoon salt

3 tablespoons lemon juice

 

Directions:

 

Place four layers of cheese cloth inside a colander. 

 

Heat milk and salt to a simmer over medium high heat.  Add lemon juice and continue to cook for 1 or 2 minutes until the milk begins to curdle.  Using a slotted spoon, scoop curds from liquid and place in cheese cloth-lined colander.  Allow to drain for one minute.  Place colander in the refrigerator to cool cheese.
