Henny’s Apple Cake

This recipe is from my mother’s personal cook book and we call it Henny’s Apple Cake, since we got the recipe from aunt Henny. This easy little cake has been served many times in my parent’s house out on the Island of Senoren and I have many happy childhood memories tied to it. You can serve it warm with a slice of creamy vanilla ice cream or you can serve it cold as is, fantastic with a cup of coffee.

3 eggs

1 ¼ cup sugar

1 cup cake flour

3 tbsp butter


Pearl sugar


1 Apple




Mix egg and sugar, then slowly mix in the flour until you have a nice smooth mix.

Peel 2 medium sized apples and slice them thin.

Grease a 9 inch baking pan with some butter and then pour the mix into it.

Insert apple slices in a pattern of your choice.

Sprinkle cinnamon and pearl sugar on top.

Melt the butter and drizzle it on top.


Set your oven to 435 degrees and let the cake bake for 15 - 20 minutes or until golden brown.

Serve with coffee.
